Home cookin'...
I had bought & roasted a butternut squash last night that wasn't as flavorful as I had hoped, so I had to find a way to save it. (Who wants to toss 2 pounds of squash?!) So I stopped at the store for Arborio rice today & made a huge batch of butternut squash + bacon risotto. Heaven in a pan. 40 minutes of stirring was never so worthwhile!
