I've been meaning to make these Vietnamese spring rolls all summer, ever since I visited Saigon 39. I haven't made them in years, so it felt like time (although the temperature outside dropped 20 degrees today—something warm might have felt more appropriate!). Loaded with shrimp, rice noodles, carrots & cilantro... But the spicy peanut sauce is the best!
They were tough to eat because, in my excitement, I overloaded them. What they lacked in appearance, they more than made up for in taste, fortunately. ;)
