Top Chef: desperation edition

   Having been out of town this weekend and not wanting to hit the store, I was left to concoct a dinner from what I had on hand. And much to my shock, it worked! A surprisingly good combination of spinach salad with goat cheese, raspberries, honey roasted almonds and raspberry dressing; spicy scrambled eggs with peppers, onions, garlic & cheese; and roasted acorn squash with homemade chili-lime vinaigrette. (The vinaigrette was even good on the eggs. Weird!)
A dinner almost good enough to turn me into a vegetarian. ALMOST.
