YUM

   I may become vegetarian yet. Roasted acorn squash with homemade chili-lime vinaigrette + sautéed kale and tomatoes with goat cheese... I guess I could have planned more color variation, but the flavors paired very well. I'll definitely do these again. Hooray for superfoods! I have to credit Cafe Gratitude for inspiring me to be more adventurous & gourmet with my veggies.
